When one or more items on the canvas are hidden, the eye icon on the lower-right of the screen should change to a half-closed eye, just like the individual eye icons do on each item. When no items are hidden, the eye icon on the lower right should appear wide open (as it does now).
And there should be help text on this item and all other icons and controls.

I totally agree with the help text, It's very difficult and breaks my workflow when I need to leave the software to find out what the hell an icon is and what it is suppose to do. Just put help text there so that when I hover over the icon it tells me exactly what it is and what it does. Is that so difficult?
