Can I change the settings so my video can fit a vertical monitor? The dimensions area seems to be locked so when I adjust width it also adjusts the height.

Videoscribe currently does not offer a way to change the screen proportions (you can change the dimensions but not the proportions)
You could crop your finished video using one of a variety of video editing programs. A free program such as Freemake might do it.
