Seems the longer I make my scribe the more frequent I encounter the "not responding" behavior in VS. It typically happens when I want to change the hand used for text or moving in an image.
I have waited more then 20 minutes to see if I was being impatient, but after that time and no response I'm forced to shut the program down.

There are a number of things that can cause videoscribe to become unresponsive. The most common contributing factors are: 1) unnecessarily large image file sizes and 2) excessive zooming of the camera, but other factors can also contribute to freezes, slowdowns and crashes.
You can attach your scribe here or save it to the cloud and tell support the name of it if you want specific feedback.

Thanks Mike, it must have to do with image size. This is out of my scope
of knowledge so I'll ask around my company to see who can optimize my
images. Or I'll take the time to learn something new! The link has a lot
of information. I should have searched on "freezing".
Not to sell myself short but I'm just a Marketer with no graphics experience except for screen captures :)

I assume there is a setting to stop video scribe connecting to the internet every few minutes and creating not-responding issues. In a corporate environment the firewall and network config don't cope well. Adobe products have this issue but have a setting to avoid this.

Intermittent lagging could be due to the autosave feature kicking in. If you increase the delay of the autosave this will happen less often. You could also turn off the autosave but you must make sure that you regularly save the scribe manually. You can change the autosave frequency by clicking on the cog icon on the projects screen.
We are working on a fix for this issue.
