The audio quality of the voice overs is really poor. I know it's not a mic problem because I'm using a Blue Yeti. Is this just a known limitation with the software and I have to use a third party audio recorder to get good quality voice overs?

Hello David, it's not a limitation of the software. I'm not going to be naive enough say that there are no specialist third party tools out there that can't get a better quality but you should expect a comparable quality from VideoScribe to most. I use Audacity quite regularly to record voiceover recordings but that is more for the pause/edit/cutting functions than quality and I just did a little side by side test on the simple Mic I have here and I could not hear any discernible difference between the two recordings.
